Pineapple Chicken
You will need the following:

1 pound of chicken breast
1 can of pineapple (rings or cubes)
6 pieces of cooked bacon

After cleaning and triming the chicken breast, rub with olive oil and jerk or Jamaican seasoning.  Cook the chicken in skillet or large frying pan. Once the chicken is done, remove from pan and put pineapple in the pan to brown. This should only take a few minutes on each side.  Once the pineapple is brown, remove from pan and pat any excess oil off.  Then cut the chicken and pineapple into bite size pieces.  Put chicken and pineapple in a bowl, then break up bacon and sprinkle over chicken and pineapple.  You can server over rice, noodles, or lettuce.
